Cooking & Fermentation

Roasted underground in an earthen pit oven. Juice separated by mechanical roller mill. Drawn from a deep on-site well. Fermented in stainless-steel tanks on agave sugars alone.

Distillation & Maturation

Bottled at 40% abv.
