How It’s Made

Origin

Distilled at NOM 1595 in Central Jalisco, Mexico. Agave grown in Jalisco.

Cooking & Fermentation

Roasted underground in an earthen pit oven. Juice separated by mechanical roller mill. Drawn from a deep on-site well. Fermented in the open air in stainless-steel tanks on agave sugars alone with a cultivated yeast strain, the agave fibers left in the must.

Distillation & Maturation

Distilled in copper pot stills. Unaged. Bottled at 45% abv.
