Overview

Additive-free Añejo tequila produced at Cascahuín Distillery (NOM 1123) in El Arenal, Jalisco. Aged in used American white oak bourbon barrels and bottled at 47% ABV to showcase both agave character and oak complexity.

The tequila is cooked in traditional stone and brick ovens before a combination of tahona and roller mill extraction. Fermentation is carried out in stainless steel and cement tanks using both fiber-on and fiber-off methods, followed by double distillation in copper pot and stainless steel pot stills. It is matured in used American white oak bourbon barrels to develop layers of vanilla, spice, and oak while preserving the natural character of the agave. Bottled at 47% ABV (94 proof) and produced without additives, Wild Common Añejo delivers a rich, balanced expression that reflects both the craftsmanship of Cascahuín Distillery and the philosophy of the Wild Common brand.

Origin

Distilled at NOM 1123 in Los Valles, Jalisco, Mexico. Agave grown in Jalisco.

Cooking & Fermentation

Slow-roasted in traditional masonry ovens. Crushed with a stone tahona alongside mechanical roller mills. Drawn from a deep on-site well. Fermented in stainless-steel tanks on agave sugars alone, the agave fibers separated out beforehand.

Distillation & Maturation

Twice distilled. Distilled in stainless-steel pot stills. Bottled at 47% abv.
