How It’s Made
Origin
Distilled at NOM 1530 in Ciénega, Jalisco, Mexico. Agave grown in Jalisco.
Cooking & Fermentation
Slow-roasted in traditional masonry ovens. Crushed beneath a stone tahona wheel. Drawn from a deep on-site well. Fermented in the open air in stainless-steel tanks on agave sugars alone, the agave fibers separated out beforehand.
Distillation & Maturation
Distilled in stainless-steel pot stills fitted with a copper condensing coil. Bottled at 52% abv.
