Origin
Distilled at NOM 1120 in Ciénega, Jalisco, Mexico. Agave grown in Jalisco.
Cooking & Fermentation
Slow-roasted in traditional masonry ovens. Crushed beneath a stone tahona wheel. Sourced from natural spring water. Fermented in the open air in stainless-steel tanks on agave sugars alone, the agave fibers left in the must.
Distillation & Maturation
Distilled in copper pot stills. Unaged. Bottled at 42% abv.
