Origin
Distilled at NOM 1123 in Los Valles, Jalisco, Mexico. Agave grown in Jalisco.
Cooking & Fermentation
Slow-roasted in traditional masonry ovens. Crushed with a stone tahona alongside mechanical roller mills. Fermented in the open air in stainless-steel tanks on agave sugars alone, the agave fibers separated out beforehand.
Distillation & Maturation
Distilled in stainless-steel pot stills. Unaged. Bottled at 46% abv.
