How It’s Made
Origin
Distilled at NOM 1123 in Los Valles, Jalisco, Mexico. Agave grown in Jalisco.
Cooking & Fermentation
Slow-roasted in traditional masonry ovens. Crushed beneath a stone tahona wheel. Drawn from a deep on-site well. Fermented in the open air on agave sugars alone, the agave fibers left in the must.
Distillation & Maturation
Distilled in stainless-steel pot stills fitted with a copper condensing coil. Unaged. Bottled at 42% abv.
