How It’s Made
Origin
Distilled at NOM 1123 in Los Valles, Jalisco, Mexico. Agave grown in Jalisco.
Cooking & Fermentation
Roasted underground in an earthen pit oven. Crushed beneath a stone tahona wheel. Drawn from a deep on-site well. Fermented in the open air in wooden vats on agave sugars alone, the agave fibers left in the must.
Distillation & Maturation
Distilled in copper pot stills. Unaged. Bottled at 49% abv.
