Cooking & Fermentation

Steam-pressure autoclave cooking. Juice separated by mechanical roller mill. Drawn from a deep on-site well. Fermented in stainless-steel tanks.

Distillation & Maturation

Distilled in a column still. Unaged. Bottled at 40% abv.
