How It’s Made
Origin
Distilled at NOM 1639 in Los Altos Southern, Jalisco, Mexico. Agave grown in Jalisco.
Cooking & Fermentation
Slow-roasted in traditional masonry ovens. Juice separated by mechanical roller mill. Drawn from a deep on-site well. Fermented in the open air in wooden vats on agave sugars alone, the agave fibers separated out beforehand.
Distillation & Maturation
Distilled in stainless-steel pot stills fitted with a copper condensing coil. Bottled at 50% abv.
