How It’s Made

Origin

Distilled at NOM 1574 in Michoacán, Mexico. Agave grown in Michoacán.

Cooking & Fermentation

Steam-pressure autoclave cooking. Juice separated by mechanical roller mill. Drawn from a deep on-site well. Fermented in the open air in stainless-steel tanks on agave sugars alone with a cultivated yeast strain.

Distillation & Maturation

Distilled in stainless-steel pot stills fitted with a copper condensing coil. Unaged. Bottled at 40% abv.
