Origin
Distilled at NOM 1499 in Los Altos Southern, Jalisco, Mexico. Agave grown in Jalisco.
Cooking & Fermentation
Steam-pressure autoclave cooking. Juice separated by mechanical roller mill. Drawn from a deep on-site well. Fermented in stainless-steel tanks on agave sugars alone.
Distillation & Maturation
Distilled in stainless-steel pot stills fitted with a copper condensing coil. Bottled at 40% abv.
