How It’s Made
Origin
Distilled at NOM 1592 in Los Altos Southern, Jalisco, Mexico. Agave grown in Jalisco.
Cooking & Fermentation
Diffuser-assisted extraction, without traditional roasting. Juice separated by mechanical roller mill. Drawn from a deep on-site well. Fermented in stainless-steel tanks on agave sugars alone, the agave fibers separated out beforehand.
Distillation & Maturation
Distilled in a column still. Bottled at 40% abv.
