How It’s Made

Origin

Distilled at NOM 1579.

Cooking & Fermentation

Slow-roasted in traditional masonry ovens. Crushed beneath a stone tahona wheel. Drawn from a deep on-site well. Fermented in the open air in stainless-steel tanks on agave sugars alone, the agave fibers separated out beforehand.

Distillation & Maturation

Twice distilled. Distilled in copper pot stills. Unaged. Bottled at 54% abv.
