How It’s Made
Origin
Distilled at NOM 1614 in Los Valles, Jalisco, Mexico. Agave grown in Jalisco.
Cooking & Fermentation
Steam-pressure autoclave cooking. Juice separated by mechanical roller mill. Sourced from natural spring water. Fermented in stainless-steel tanks on agave sugars alone, the agave fibers separated out beforehand.
Distillation & Maturation
Distilled in stainless-steel pot stills fitted with a copper condensing coil. Unaged. Bottled at 50% abv.
