Origin
Distilled at NOM 1487 in Los Altos Southern, Jalisco, Mexico. Agave grown in Jalisco.
Cooking & Fermentation
Steam-pressure autoclave cooking. Diffuser. Fermented in stainless-steel tanks on agave sugars alone, the agave fibers separated out beforehand.
Distillation & Maturation
Distilled in stainless-steel pot stills fitted with a copper condensing coil. Unaged. Bottled at 40% abv.
