Origin
Distilled at NOM 1633 in Los Altos Southern, Jalisco, Mexico. Agave grown in Jalisco.
Cooking & Fermentation
Slow-roasted in traditional masonry ovens. Crushed beneath a stone tahona wheel. Drawn from a deep on-site well. Fermented in the open air in wooden vats on agave sugars alone, the agave fibers left in the must.
Distillation & Maturation
Distilled in copper pot stills. Unaged. Bottled at 43% abv.
