How It’s Made

Origin

Distilled at NOM 1468 in Los Altos Southern, Jalisco, Mexico. Agave grown in Jalisco Highlands.

Cooking & Fermentation

Slow-roasted in traditional masonry ovens. Juice separated by mechanical roller mill. Drawn from a deep on-site well. Fermented in the open air in stainless-steel tanks on agave sugars alone with ambient, wild yeast, the agave fibers separated out beforehand.

Distillation & Maturation

Twice distilled. Distilled in copper pot stills. Bottled at 40% abv.
