How It’s Made
Origin
Distilled at NOM 1437 in Los Valles, Jalisco, Mexico. Agave grown in Jalisco.
Cooking & Fermentation
Steam-pressure autoclave cooking. Juice separated by mechanical roller mill. Drawn from a deep on-site well. Fermented in the open air in stainless-steel tanks on agave sugars alone, the agave fibers separated out beforehand.
Distillation & Maturation
Distilled in pot stills paired with a rectifying column fitted with a copper condensing coil. Unaged. Bottled at 40% abv.
