How It’s Made
Origin
Distilled at NOM 1547 in Ciénega, Jalisco, Mexico. Agave grown in Jalisco.
Cooking & Fermentation
Slow-roasted in traditional masonry ovens. Juice separated by mechanical roller mill. Drawn from a deep on-site well. Fermented in the open air in stainless-steel tanks on agave sugars alone with a cultivated yeast strain, the agave fibers separated out beforehand.
Distillation & Maturation
Distilled in stainless-steel pot stills. Unaged. Bottled at 40% abv.
