How It’s Made
Origin
Distilled at NOM 1109 in Los Valles, Jalisco, Mexico. Agave grown in Jalisco.
Cooking & Fermentation
Steam-pressure autoclave cooking. Juice separated by mechanical roller mill. Drawn from a deep on-site well. Fermented in the open air in stainless-steel tanks on agave sugars alone, the agave fibers separated out beforehand.
Distillation & Maturation
Distilled in stainless-steel pot stills fitted with a copper condensing coil. Unaged. Bottled at 50.5% abv.
