Origin

Distilled at NOM 1119 in Los Valles, Jalisco, Mexico. Agave grown in Jalisco.

Cooking & Fermentation

Steam-pressure autoclave cooking. Juice separated by mechanical roller mill. Sourced from natural spring water. Fermented in stainless-steel tanks on agave sugars alone.

Distillation & Maturation

Distilled in pot stills paired with a rectifying column fitted with a copper condensing coil. Bottled at 40% abv.
